Here is something that everyone should take to a tailgate party: Ingredients: 1 and 1/2 cup creamy peanut butter 1/2 cup softened butter 1 teaspoon vanilla 1/2 teaspoon salt 3-4 cups confectioners sugar (powdered sugar) 2 cups semi-sweet chocolate chips 2 tablespoons crisco all veg shortening Combine peanut butter, butter, salt and vanilla in a bowl. Beat with electric mixer on low until well blended. Add 2 cups of the confectioners sugar and beat on low until blended. Add more of the confectioners sugar until, when you form a small ball, it stays on a toothpick. Then shape into 1 inch balls and refrigerate. Put the chocolate chips and shortening into a bowl and microwave 30 seconds on medium. Stir and repeat until smooth (reheat as needed when dipping the balls) Insert a toothpick into the balls and dip 3/4 of it into the chocolate. Put on wax paper and remove the toothpick. You can smooth over the toothpick hole with your finger. Refrigerate until firm. Yield: 40 but of course the size you make them will give you more of them or less. Here is what they look like p.s. keep an eye on the image showing the buckeye candy, as it may be removed without notice from the hosting site. you may want to Save Image As so you can input it here if that does happen. Also to mention, they are GREAT!
