Well sometimes I use breakfast cut Pork Chops or 2 thick Rib Eyes, I always like most tender cuts of meat I can get. Cut the chops/steaks up in itsy bitsy small bites, Save the trimings cut up in small pieces too. Now don't tell me I'm wrong here. I Don't Like Kidney or Red Beans. I use Pinto beans (even used large white butter beans) been simmering over night, throw the trimmings in the pot of beans 1st thing in the morning Get the leanest ground chuck you can, Stir fry the pork pieces or steak till not quite done, and add the ground beef till done, drain drippings off. In the pot of beans add Chili power, Cayenne Peppers, Garlic, or chosen spices all to taste, bottle of Lousiana Hot Sauce, tomatoes if wanted, add olives (I like the green) and mushrooms if you like add meat and let simmer a couple more hrs. Make some Grill Cheese with the stinkest Cheddar or Pepper Jack you can find Now plop down in front of the TV, Pop open a cold Brew, and lets watch the race, ball game, or at least a Good Movie

Butch, your Chili sounds mighty good! Some great protein in your dish! Do you drain off the water the beans have been simmering in? (Seriously, you leave the burner on during the night?)

No I use a Crock Pot for the beans and cooks all night and all day, then drain off only the excess, but got to save some to keep it all moist One thing Char taught me was to soak the beans over night in clear cool water, then pour that water down the drain

LROL..as you can tell, I'm totally a newbie with beans! Do you soak one night in the clean cool water, then drain the beans and place them in the crock pot with new water you keep for cooking over night? (or are you cheating..and not draining the water!)

No it takes 2 days to make a good pot of beans, soak the 1st night making sure to pour that water out down the drain or water plants with it and get New Water then cook the next night and day, come in after work cook everything. The purpose of soaking is 2 fold,1st it makes the beans more tender, Never reuse the water they soaked, you can but look out, It will keep the poots to a minimum, otherwise roll down the window and hold your nose LMAO
